Anne’s Pumpkin Soup Recipe

Ingredients ( no measurements adjust to taste)

Curry leaves, onion, coconut oil, coconut milk, curry powder, ginger

Instructions

  1. Roast pumpkin with coconut oil until soft (170 degrees for 40 mins)
  2. Saute curry leaves, grated ginger and onion in coconut oil until soft and fragrant
  3. Add some curry powder to taste
  4. Add roasted pumpkin
  5. Add coconut milk
  6. Blend and season with salt
  7. Enjoy!
